Fine Cooking explains that the addition of dairy like sour cream, buttermilk, or cream cheese keeps the cake moist as it bakes. When you use a dairy product that also contains acidic ingredients , the acid in buttermilk tenderizes the gluten found in the flour to create a finer crumb. Put it all together, and you’ll end up with a perfect pound cake. Place the thinly-sliced onions in a mason jar.
